Quark pancakes with berry dessert
Ingredients
Ingredients for approx. 6 portions
For the pancake batter:
200 g flour (smooth)
500 ml milk
20 g granulated sugar
4 eggs
Pinch of salt
40 g butter (melted)
For the quark filling:
350 g quark cheese
40 g powdered sugar
100 g cream
25 g sour cream
Half a grated lime (organic)
Bourbon vanilla (for flavouring)

Preparation
Carefully mix flour, milk, sugar and a pinch of salt. Ensure that no lumps form in the pancake dough. Next, stir in the eggs and let the dough sit for about 20 minutes. The successfully prepared dough should be somewhat viscous.
For the quark filling, place all the ingredients in a bowl and mix with a whisk until the mixture is smooth. Flavour with bourbon vanilla as desired and let cool in the refrigerator for 30 minutes.
Heat some butter in a pan (26 cm in diameter). Pour in a small amount of the pancake dough and turn the pan back and forth so that the dough is evenly distributed. After a few minutes, small bubbles will begin to appear in the dough. When this happens, flip over and cook the opposite side until golden brown. Next, brush the pancake with the quark filling on one side and fold together in the pan. Serve the finished pancake on a plate and repeat the process.
